Audrey Making Chocolate Chip Cookies ~ July 2021
One thing that COVID enabled me to rediscover was the joy of taking time to cook as a family. Whether making homemade pizza with my daughters or mixing smoothies for them and Hal in the mornings, the additional time spent in the kitchen was fun for them and restorative for me. Good old fashioned Nestle Toll-House cookies of course made the list. In honor of National Chocolate Chip Cookie Day, I’ve included some of our favorite 15-minute recipes.

Here are three of our family favorite 1-2-3 recipes:

(1) Crepes
1 cup flour
1 1/2 cup milk
3 eggs
 
Mix all ingredients. Heat crepe or large frying pan to medium high heat. Coat pan lightly with butter. Pour 1/3 of mixture into pan, covering bottom evenly. Flip crepe when mixture congealed. Serve immediately with butter, sugar, butter and sugar, Nutella, etc.
 
(2) Quesadillas
Coat frying pan lightly in butter. Place one tortilla on heated pan (medium heat). Cover in Mexican three cheese blend (shredded), and top with another tortilla. Flip over when cheese melted to a lightly brown second tortilla. Slice into triangles with pizza cutter or food scissors. Serve with carrot or celery sticks, guacamole, etc.

(3) Good, old fashioned, chocolate chip cookies
